In this study we performed a comparative analysis of the flavonoid compounds found in the composition of some species belonging to the Cucurbitaceae family, namely: cucumber (Cucumis sativus), bitter melor (Momordica charantia), zucchini or courgette (Cucurbita pepo) and horned melon (Cucumis metuliferus). The flavonoids in these species were identified by high performance liquid chromatography. The Cucumis metuliferus plant extract had the highest content in phenolic compounds (14.424 mg/L), while the Cucumis sativus plant extract had the lowest content (0.797 mg/L). Individual measurement of antioxidants by separation does not allow for certainty as to the antioxidant activity of a given extract owing to the synergistic effects that may appear between the compounds present therein. As a result, antioxidant activity was expressed according to the method based on the generation and capture of DPPH radicals (o, o-diphenyl-?-picrylhydrazyl). The highest antioxidant capacity is found in the Cucumis metuliferus extract (11.16%) while the Cucumis sativus plant extract has the lowest antioxidant potential (2.35%). The antioxidant activity of the Cucumis metuliferus extract is comparable to the Trolox (6-hydroxy-2,5,7,8-tetramethylcroman-2-carboxylic acid) standard solution 0.2 Mm (9.44%).
