The paper is part of an important Scientific Research Project, VALINTEGR 2018-2020, in which some food supplements from the Cannabis Sativa and Helianthus tuberosus residues will develop.
This study highlights the influence of some processing processes on the activity of some oxidoreductases from Canabis Sativa. The hemp seeds contain the daily needs of essential fatty acids: omega 6 and omega 3, which keep the clean of blood vessels and prevent cardiovascular disease. Also, hemp seeds contain 40% fat, 30% protein and 15% carbohydrates. Thus, seeds can provide the optimal amount of protein by providing daily needs for vegetarian diet. The artichoke is an important source of inulin and its leaves accumulate - during the period of growth- significant amounts of chlorophyll and silicon. Through proper processing of these bio-components, can be produced valuable dietary supplements for vegetarian, diabetic and prevent of Alzheimer or Parkinson's disease. In design and production of food supplements it is very important to preserve the nutritional value of valuable plant compounds. That?s it is very important for processors to choose the best processing option. |
