This paper presents the results of a study of the hydrolysis of microcrystalline cellulose in a subcritical water medium. The influence of temperature, time, cellulose/water ratio, cellulose particle size, and other parameters on the hydrolysis process was studied. The influence on the process of pretreatment of aqueous dispersions of cellulose with ultrasound was studied. It was shown that the optimal processing time is 30 min (~ 150 kJ). Over a given period of time, destruction and partial hydrolysis of the amorphous part of cellulose occurs, which is due to an increase in the degree of conversion of cellulose in subcritical water and the yield of glucose. It was shown that subcritical water at a temperature of about 180 °C cellulose undergoes sequential depolymerization to oligosaccharides (including water-soluble), disaccharides and monosaccharides, then hydrolysis. At higher temperatures (230 °C and more), these low molecular weight compounds are repolymerized, condensed and pyrolyzed to form liquid oils and cellulose carbonisates containing compounds with aromatic fragments in the chemical structure.
