In 2018 the squid catch in the Russian Federation amounted to about 102 thousand tons. Different kinds of products are made from squid (dried, air-dried and smoked squid, preserves, canned food, culinary products), but frozen squid makes a great part of them. In the production of squid carcasses, about 52.3% of waste is generated, of which 23.2% accounts for the liver and 76.8% for the entrails, tentacles and head. Therefore, about 54 thousand tons of waste is generated annually, where 41 thousand tons accounts for the entrails, tentacles and the head. To date, waste from cutting squid is hardly used by industry. Previously the studies on the possibility of processing squid waste with the herbal enzyme preparation papain were carried out and rational parameters of its use were determined. Microbiological originated products are widely represented at the market of enzyme preparation. In this respect it is important today to determinate the specificity of enzyme preparation of microbiological origin to squid waste and compare its activity with papain and a complex of its own enzymes. Studies on comparison of the substrate specificity of papain, two proteinases of microbiological origin (Brewers protease BL, Maxazyme NNP DS) and a complex of own enzymes to waste from squid processing Berryterthis magister were conducted and based on them a higher substrate specificity of Brewers protease BL in comparison with papain and Maxazyme NNP DS was established. In accordance with the change of the degree of biotransformation of squid waste proteins from the amount of the enzyme and the duration of the process, the rational regimes for producing a hydrolysate with an average degree of protein hydrolysis using the Brewers protease BL enzyme have been established: the process time is 3 hours, the amount of the enzyme is 0,7%, and the temperature is 50 ± 2 ° ?, hydraulic module 1:1 Comparison of the biotransformation processes of squid waste proteins as affected by a complex of its own enzymes and Brewers protease BL showed that the use of Brewers protease BL enables to increase the yield of nitrogen-containing substances into the hydrolysate by 11.5% and reduce the yield of non-hydrolyzable residue by 2.4 times. The use of the enzyme preparation Brewers protease BL also allows to speed up the process of biotransformation of squid waste by 3 times in comparison with autolysis.
