In the current work, the process of fermentative conversion of animal waste and non-hydrolized plant materials (peat) using food waste and ascorbic acid salts as a stimulants is described. The amino acid composition of the biofermentation products was estimated. The possibility of the target biosynthesis for the production of fertilizers and feed additives with the pre-determined properties was recognized. It was shown that the additive of bread making waste with the concentration of 10 wt. % increases the amino acid production by 1.5 times due to the presence of microorganism growth stimulants from the yeast cells. Iron ascorbate exhibits the amino acid production by almost 3 times. The kinetics of amino acid production in the presence of metal ascorbates was calculated for fermentation process.
