Inhibition of the coil-helix transition of gelatin and retardation of the gelation process of the system as a whole is an important scientific problem. The solution to this problem will make it possible to maintain the properties of gelatin solutions for a long time without changing their rheological characteristics. In this work, by the method of dynamic mechanical analysis, the dependences of the time profile of gelatin solutions depending on the concentration of 10, 13 and 16 wt.%, as well as the different dissolving system water/acetic acid and water/sodium chloride, were studied. The influence of the acetic acid content in the dissolving system on the coil-helix transition of gelatin was examined. It was found that an increase in the acid content from 10 to 50 vol.% the gelation transition time of solution is significantly increased from 38 to 60 min or more. Moreover, the character of the kinetic curve of solutions with acid content is poorly described by the Avrami kinetic equation of crystallization. On the other hand, aqueous solutions of gelatin in the presence of 1M sodium chloride exhibited behavior consistent with the crystallization theory equation, but shorter gel transition times. With an increase in the gelatin content in the solution from 10 to 13 and 16 wt.%, the gel transition time was reduced from 27 to 8 and 0 min, respectively. These differences in the effect of dissolving systems on the structure of gelatin may indicate a possible obstacle to the formation of a helix conformation which occurs under the action of acidic solutions.
